English sparkling wine, reimagined

Solstice was created to explore a richer, more time-led expression of English sparkling wine. The Crouch Valley offers naturally generous, ripe fruit, and each edition builds on that character through patience and continuity.

Solstice is bottled and released in numbered editions, each reflecting the characteristics of its base year while benefiting from the depth of previous blends carried forward in the perpetual reserve. Every release reflects its season, while carrying the memory of those that came before.

Golden in colour with fine, delicate bubbles, Solstice opens with aromas of citrus oil, orchard fruit and toasted brioche. The palate is supple and layered, showing stone fruit, pastry and roasted nuts, lifted by a clean line of acidity and a long, savoury finish.

 

Winemaking

Solstice is a multi-vintage sparkling cuvée produced from Pinot Noir, Chardonnay and Meunier. The base wines are hand-harvested, whole-cluster pressed and fermented in oak barriques. A proportion of each blend is held back in a foudre-aged perpetual reserve, which forms part of every edition and supports continuity and complexity.

Following primary fermentation, the wines remain on lees in barrel before blending. Secondary fermentation takes place in bottle at a targeted pressure of 4.5 bar. After sur lie ageing, the wine is disgorged with barrel-aged Chardonnay dosage and given further time under cork before release.
